100% Chardonnay aged 7 months in new French oak barrels. After harvesting, the grapes were crushed and pressed with minimal maceration and then settled to 1% solids to naturally embellish the clarity of the wine. Inoculated with Pris de Mouse yeast, the wine was then transferred to new Allier French Oak barrels from coopers Francios Freres. The Chardonnay was barrel fermented and aged on the lees. The wine was not innoculation for malolactic fermentation, resulting in a wine with texture, complexity and the ability to age. Produced with 100% Chardonnay grapes.
Creamy flavors of ripe pear and bold tropical fruit grace the palate. Well-balanced with a silky mouth-feel and a nice acidic backbone. Elegant and full-bodied with hints of toasty oak through a long, layered finish.
